Cutlery description Production area:Sakai City, Osaka Prefecture (Sakai Cutlery) Category: Sujihiki Blade length: 270mm Steel: Swedish stainless steel (AEBL steel made by Woodiholm, Sweden) Handle: Laminated plywood (with antibacterial agent) with specially processed ferrule (SUS304) (The ferrule prevents dirt from accumulating at the boundary between the blade and the handle, making it hygienic to use) Made from world-famous Swedish stainless steel, the heat treatment (hardening and tempering) has a Rockwell hardness of 58-59HRC, which is a good balance of hardness and toughness. The slightly lower hardness makes it easy to maintain, such as by resharpening. Each blade is carefully sharpened by hand by a skilled craftsman, so you can enjoy a wonderful sharpness. The handle is made of laminated plywood containing an antibacterial agent. It is very hygienic and the weight balance has been taken into consideration, so you won't get tired even if you use it for a long time.
