MISONO Square-shaped Boning Knife No.541 Molybdenum Steel with Bolster 145mm (骨スキ 角型 MISONO ミソノ NO.541 モリブデン鋼 口金付 145mm)
¥25,500
※You can still order items that are out of stock. We will arrange it for you, so please feel free to request it via DM or other means. Cutlery description Production area:Seki City, Gifu Prefecture (Seki Cutlery) Category: Bone Skimmer Blade Length: 145mm Steel: Vanadium-molybdenum steel Handle: Black plywood with ferrule (The ferrule prevents dirt from accumulating at the boundary between the blade and handle, which is where dirt tends to accumulate, making it hygienic to use.) Molybdenum vanadium steel contains both molybdenum and vanadium. The inclusion of molybdenum (Mo) and vanadium (V) improves wear resistance (retains sharpness) and corrosion resistance (resists rust), so in addition to knives, it is also used for medical scalpels, machine parts, tool steel, and other uses that are easy to maintain, making it a popular steel material for chefs and home use alike. Many stainless steel knives use molybdenum and vanadium. Although it is resistant to rust, this does not mean that it will not rust at all. We recommend that you remove any moisture and store it after drying it thoroughly. A characteristic of molybdenum steel rust is that it leaves dotted pinholes, like holes made by a pin, so please be careful when handling it.
