Gyuto DP Gold Layered Tsuchime with Bolster 180mm (牛刀 DPゴールド 積層 槌目 口金付 180mm)
¥27,000
SOLD OUT
※You can still order items that are out of stock. We will arrange it for you, so please feel free to request it via DM or other means. Cutlery description Production area: Echizen City, Fukui Prefecture (Echizen Cutlery) Category: Gyuto Blade length: 180mm Steel: V Gold No. 10 Handle: With ferrule (The ferrule prevents dirt from accumulating at the boundary between the blade and the handle, which is prone to dirt accumulation, and allows for hygienic use) "DP Gold" is a steel material that is rust-resistant and has a sharp edge. By sandwiching the stainless steel in a mille-feuille shape on both sides, multiple wave patterns emerge. The flat part of the blade has "hammer marks" as if it was hit with a hammer, so when cutting ingredients, a gap is created between the blade and the ingredients, making it very easy to separate the blade from the food, just like a perforated knife. The handle is made of laminated plywood, making it highly water-resistant. (Small size for a Gyuto knife)

※You can still order items that are out of stock. We will arrange it for you, so please feel free to request it via DM or other means. Cutlery description Production area: Seki City, Gifu Prefecture (Seki Cutlery) Category: Gyuto Blade length: 230mm Steel: Laminated steel Handle: Micarta handle with ferrule (The ferrule prevents dirt from accumulating at the boundary between the blade and the handle, which is prone to dirt accumulation, making it hygienic to use) In the world of knives, Damascus steel is famous. Its woodgrain-like pattern is very popular, and it is constantly out of stock. Damascus steel is a system in which the woodgrain pattern is created by sharpening the blade after stacking several thin steel sheets in a mille-feuille shape. Damascus steel itself is a steel material made in ancient India, and knives currently in circulation are sold as "Damascus finish" or "Damascus pattern" that resemble the image of Damascus steel. This base metal is often made by steel manufacturers, and occasionally blacksmiths make similar forgings. It can be confusing because different knife manufacturers use terms such as "Damascus finish," "sumigashi," "forged surface," and "laminated steel," but basically they are all in the same category.

Gyuto Picaso Molybdenum-Tungsten Black Composite Handle with Bolster 240mm (牛刀 Picaso モリブデンステン 黒合板共口金 240mm)
¥25,500
SOLD OUT
※You can still order items that are out of stock. We will arrange it for you, so please feel free to request it via DM or other means. Cutlery description Production area: Seki City, Gifu Prefecture (Seki Cutlery) Classification: Gyuto Blade length: 240mm Steel: Vanadium-molybdenum steel Handle: Black plywood with ferrule (The ferrule prevents dirt from accumulating at the boundary between the blade and the handle, which is prone to accumulating, and allows for hygienic use) Molybdenum vanadium steel contains both molybdenum and vanadium. The inclusion of molybdenum (Mo) and vanadium (V) improves wear resistance (hard to lose sharpness) and corrosion resistance (hard to rust), so it is used not only for knives but also for medical scalpels, machine parts, tool steel, etc., and is a steel material that is popular with many people from chefs to home use because it is easy to maintain. Many stainless steel knives use molybdenum and vanadium. Although it is resistant to rust, it does not mean that it will not rust at all. We recommend that you thoroughly remove any moisture and dry it before storing it. A characteristic of molybdenum steel rust is that it leaves dotted pinholes, as if they were made by a pin, so please be careful when handling it.

※You can still order items that are out of stock. We will arrange it for you, so please feel free to request it via DM or other means. Cutlery description Production area:Seki City, Gifu Prefecture (Seki Cutlery) Category: Gyuto Blade length: 240mm Steel: SK material (Japanese steel) Handle: Black plywood with ferrule (The ferrule prevents dirt from accumulating at the boundary between the blade and the handle, which is prone to dirt accumulation, and allows for hygienic use) SK material is a high-carbon steel that contains 0.55 to 1.5% carbon and does not contain any alloying elements such as chromium or molybdenum, and is a material that is frequently used in tools. SK is an abbreviation that combines English and Japanese. S stands for steel and K stands for tool. SK material, like S-C material (carbon steel for mechanical structures), can easily obtain a harder heat treatment hardness with an increase in carbon up to about 0.6%, but above 0.6%, the increase in heat treatment hardness rapidly slows. SK material is often required for impact resistance and abrasion resistance rather than hardenability, and steels with a low carbon content are chosen for applications where impacts will be performed, i.e. impact resistance that requires toughness, while steels with a high carbon content are chosen for abrasion resistance that requires sharpness, so these are the materials used for knives. SK material has long been a popular material for knives, and is the standard steel used for household use. As it is a material that rusts, it has a better sharpness than stainless steels such as molybdenum.

This knife has been highly praised by professional chefs, who say that "the cut surface of the ingredients is shiny," "it is comfortable to use," and "it has an interesting quality that cannot be summed up simply as being good at cutting." The steel used is "powdered high-speed steel." High-speed steel was originally developed as a blade steel used for metal processing, such as the tip of a drill. Powdered high-speed steel is made by first powdering the metal and removing impurities, which makes the metal structure dense, strong, and highly wear-resistant, making it popular as a steel material for knives. The handle is a Kyotsuba-piercing type. With a normal Western knife, the tang and handle are secured with a rivet, but with this knife, the tang is passed down to the bottom of the handle and secured in place. Although riveting provides a strong hold, it can create gaps that can allow water in, but this structure has been designed to reduce this possibility.

Cutlery description Production area: Sakai City, Osaka Prefecture (Sakai Cutlery) Category: Gyuto Blade length: 330mm Steel: Swedish stainless steel (AEBL steel made by Woodyholm, Sweden) Handle: Laminated plywood (with antibacterial agent) with specially processed ferrule (SUS304) (The ferrule prevents dirt from accumulating at the boundary between the blade and the handle, which is prone to dirt accumulation, and allows for hygienic use) Made of world-famous Swedish stainless steel cutlery steel, the heat treatment (quenching and tempering) is set to a Rockwell hardness of 58 to 59 HRC, which is a good balance of hardness and toughness. By finishing with a slightly lower hardness, maintenance such as resharpening can be easily performed. The blade is carefully sharpened one by one by skilled craftsmen, so you can enjoy a wonderful sharpness. The handle material is made of laminated plywood with antibacterial agent. It is very hygienic and the weight balance is also taken into consideration, so you won't get tired even if you use it for a long time.
