Cutlery description Production area:Sakai City, Osaka Prefecture (Sakai Cutlery) Category: Western Deba Blade length: 210mm Steel: Swedish stainless steel (AEBL steel made by Woodiholm, Sweden) Handle: Laminated plywood (with antibacterial agent) with specially processed ferrule (SUS304) (The ferrule prevents dirt from accumulating at the boundary between the blade and the handle, making it hygienic to use) Made from world-famous Swedish stainless steel blade steel, the heat treatment (hardening and tempering) results in a Rockwell hardness of 58-59HRC, which provides a good balance of hardness and toughness. The slightly lower hardness makes it easy to maintain, such as by resharpening. Each knife is carefully sharpened by hand by a skilled craftsman, so you can enjoy excellent sharpness. The handle is made of laminated plywood containing an antibacterial agent. It is very hygienic and the weight balance has been taken into consideration, so you won't get tired even after long periods of use.
