This sword-shaped Santoku has a blade between a Santoku and a Gyuto knife, and is made by Tanaka Ichino Cutlery Factory in Miki City, Hyogo Prefecture.
Naturally, it cuts well, but Makoto's unique knives are full of originality that you won't find anywhere else.

The best thing about this knife is that it has a laminated structure in which thin stainless steel, which is made hard in the center to give it a sharp edge, is sandwiched between thin stainless steel in a mille-feuille shape, and when sharpened, it creates a wave pattern with many lines running through it.
Also, compared to a regular Santoku knife, the blade is thinner and more similar to a Gyuto knife.

Because each knife is sharpened by a craftsman, no two knives are exactly the same, and each one is one of a kind.
