Made from world-famous Swedish stainless steel blade steel, the heat treatment (hardening and tempering) has a Rockwell hardness of 58-59HRC, which is a good balance of hardness and toughness.

The slightly lower hardness makes it easy to maintain, such as by resharpening.

Each knife is carefully sharpened by hand by a skilled craftsman, so you can enjoy a wonderful sharpness.

The handle is made of laminated plywood containing an antibacterial agent. It is very hygienic and the weight balance has been taken into consideration, so you won't get tired even after long periods of use.
